Ground beef or turkey

Bell peppers
4 peppers
Taco seasoning
1 packet
Jalapeno
1 jalapeno
Tomato
1 tomato
Plain Greek yogurt
3 tablespoon
Shredded cheese
1 cup
Black beans

Shredded lettuce

Cut up bell peppers in slices that have a pocket. This can be done best just by cutting them vertically away from the stem.

Place bell peppers on a large baking pan.

Dice up the jalapeno and tomato.

In a skillet pan, brown the meat of choice with 1 teaspoon of olive oil. Add taco seasoning with ½ cup water and cook through.

Add meat to the pepper slices and top with jalapeno, tomato, cheese, and black beans.

Cook the nachos at 400 degrees for 10-12 minutes or until the cheese is melted and the peppers are slightly tender.

Top with shredded lettuce and Greek yogurt. Enjoy!
