1 egg
Egg whites
2 egg white
6 inch Tortilla (corn or flour)
2 Tortilla
Salsa
1/2 cup
Shredded cheddar cheese
1 tablespoon
Avocado
1/4 avocado

Top tortillas with cheese. Heat in the microwave until the cheese is melted, ~30 seconds.

In a small bowl, beat together the 1 egg and 2 egg whites.

In a nonstick skillet (with cooking spray optional), over medium heat, add the scrambled egg mixture.

Fry until the scrambled eggs are cooked through, ~90 seconds.

Divide the scrambled egg mixture between the two tortillas.
