It might not be your traditional bruschetta; however, it is incredibly delicious and loaded with protein, veggies, and flavor.

Ingredient Notes & Substitutions:

  • Tomatoes: rainbow blend or regular cherry tomatoes work great, as do any other tomatoes you prefer.
  • Cottage cheese: if you are not a cottage cheese fan, you can swap for low-fat ricotta.
  • Bread: sourdough crisps nicely and has a larger surface for toppings but any bread will do.

  • Sourdough bread
    1 slice
  • Cherry tomatoes, halved
    1/2 cup
  • Red onion, minced
    1 tablespoon
  • Olive oil
    1/2 teaspoon
  • Basil leaves, cut into thin strips
    6 leaves
  • Garlic, minced
    1 teaspoon
  • Sea salt
    to taste
  • Black pepper
    to taste
  • Low-fat cottage cheese
    1/2 cup
  • Balsamic glaze
    to garnish
Directions

    Toast bread and set aside on a plate.

    In a small bowl, combine cherry tomatoes, red onion, olive oil, basil and garlic. Stir and season with salt and pepper.

    Smear cottage cheese on top of the toast, then add the bruschetta mixture on top. Drizzle with balsamic glaze and top with flaky sea salt.
