  • Yellow onion, chopped
    1 onion
  • Garlic cloves, minced
    6 clove
  • Ginger, grated or minced

  • Garam Masala
    1 tablespoon
  • Cumin
    2 teaspoon
  • Turmeric
    2 teaspoon
  • Paprika
    2 teaspoon
  • Salt

  • Chickpeas, rinsed & drained
    2 (15.5 ounce) can
  • Cauliflower, chopped and steamed
    1 head
  • Tomato puree
    1 (15 oz) can
  • Diced tomatoes
    1 (15 oz) can
  • Coconut milk
    1 (15 oz) can
Directions

    Heat oil in a large pot over medium heat. Add onion, cook for 2 minutes then add garlic and ginger. Continue cooking until soft and fragrant.

    Mix in seasonings and cook for an additional 2-3 minutes.

    Add steamed cauliflower, chickpeas, tomato puree and coconut milk.

    Cover and cook, stirring occasionally, until hot.
