Lean ground beef or turkey, cooked

Vegan or regular mayonnaise

Dijon mustard

Relish
1/2 tablespoon
Ketchup
1 tablespoon
Shredded romaine
2 cup
Red onion, sliced into rings
1/4 onion
Cheddar cheese (optional)

Heat 1 tablespoon of oil in a large skillet. Add ground beef, salt, and pepper. Cook for 5-7 minutes or until browned, breaking up the meat into bite-sized pieces while stirring. Set aside to cool until just warm (otherwise the salad greens will wilt).

Make the dressing: whisk together mayonnaise, mustard, relish, and ketchup.

In a large bowl, toss together romaine, onion, cheese, tomatoes, and avocado. Add the dressing and toss to coat.

Serve the dressed salad on a plate and top with 4 oz of meat and 1 oz shredded cheese (optional).
