This easy chicken sausage recipe has only a few simple ingredients and is GI Friendly!

  • Chicken Sausage links, precooked and sliced
    4 link
  • Olive oil
    1 tablespoon
  • Bell peppers, diced
    3 pepper
  • Cherry tomatoes, chopped
    1 cup
  • Onion, diced
    1/2 cup
  • Brown rice, uncooked
    1/2 cup
  • Salt
    1 pinch
  • Pepper
    1 pinch
Directions

    Bring 1 cup of water to a boil in a sauce pan. Add brown rice.

    Stir, reduce to a simmer, and cover.

    Cook for about 20 minutes, or until water has evaporated.

    Heat olive oil in a sauté pan over medium heat.

    Add onions and salt, cook about 3 minutes. Add peppers and tomatoes, and sauté over medium heat for about 5 minutes.

    Add chicken sausage, and cook for an additional 10-15 minutes, until sausage is browned.
