Add olive oil to a large skillet over medium heat. Cook red onion and garlic cloves for 3 to 4 minutes, then add to the slow cooker.

Add all remaining ingredients to the slow cooker. Stir together and let cook on high for 4 hours or low for 8 hours.

Before serving, remove chicken breasts with tongs and shred on a cutting board. Add back to the soup.

Serve soup with a handful of crushed tortilla chips on top and your favorite toppings!
