Ready to switch up your classic taco Tuesday meal? We've got you covered with this no hassle slow cooker chicken tortilla soup. This soup is easy to prepare and guaranteed to make your kitchen smell heavenly!

Soup, Chili & Stews
Red onion, diced
Garlic clove, minced
1 can (28oz)
Low sodium chicken or vegetable broth
Green chiles, drained
1 1/2 teaspoon
Tortilla strips (for topping)
Cheese, shredded (for topping)
Avocado (for topping)
Sour cream (for topping)
Cilantro (for topping)
Lime wedge (for topping)
Add olive oil to a large skillet over medium heat. Cook red onion and garlic cloves for 3 to 4 minutes, then add to the slow cooker.
Add all remaining ingredients to the slow cooker. Stir together and let cook on high for 4 hours or low for 8 hours.
Before serving, remove chicken breasts with tongs and shred on a cutting board. Add back to the soup.
Serve soup with a handful of crushed tortilla chips on top and your favorite toppings!
Meal prep note: This recipe can be made up to a week ahead. Store finished soup in fridge and top with chips when serving.
