  • English cucumber, diced
    1 cup
  • Cherry tomato, diced
    1 cup
  • Green pepper, seeded and diced
    1/2 cup
  • Red onion, diced
    1/4 cup
  • Chickpeas, rinsed and drained
    1 can (15 oz)
  • Quinoa, cooked and chilled
    1 1/2 cup
  • Extra virgin olive oil
    3 tablespoon
  • Apple cider vinegar
    1 tablespoon
  • Lemon juice
    2 tablespoon
  • Salt
    1 pinch
  • Pepper
    1 pinch
  • Dried basil
    1/2 teaspoon
  • Chili flakes (optional)

Directions

    Toss cucumber, tomato, pepper, onion, chickpeas, and quinoa in a large bowl.
