Chocolate Chunk Cookies
The only way to follow a healthy lifestyle long-term is with B A L A N C E. A cookie here and there isn't going to be the end of the world, it's more about not going overboard AND not over-restricting yourself. These Chocolate Chunk Cookies are the perfect no guilt dessert!

- Egg1 egg
- Coconut oil, room temperature (or omit & swap with olive oil for Low FODMAP)1/2 cup
- Peanut butter1/4 cup
- Light brown sugar1/2 cup
- Maple syrup2 Tablespoon
- Almond flour (or omit & swap with oat flour for Low FODMAP)2 cup
- Baking soda1 teaspoon
- Salt1/4 teaspoon
- Dark chocolate chunks1/2 cup
- 1Preheat oven to 350° F.
- 2In a large mixing bowl, whisk together egg, oil, sugar, peanut butter and maple syrup.
- 3Add almond flour, baking soda and salt. Mix thoroughly to combine. Fold in chocolate chunks.
- 4Line cookie sheet with parchment paper or silicone baking mat.
- 5Using a cookie scoop or spoon, place dough balls two inches apart.
- 6Bake for 10 minutes or until lightly browned on top.
- 7Remove and sprinkle with sea salt.
