  • Flax eggs (2 tbsp flaxseed meal + 5 tbsp water) or regular eggs

  • Applesauce
    1/2 cup
  • Agave
    1/4 cup
  • Raw sugar
    1/3 cup
  • Baking powder
    1 teaspoon
  • Baking soda
    1 1/2 teaspoon
  • Sea salt
    1/4 teaspoon
  • Unsweetened cocoa powder

  • Unsweetened almond milk
    1/2 cup
  • Grated zuccini
    1 cup
  • All purpose flour
    1 cup

    Preheat oven to 375°F.

    Whisk together prepared flax eggs (or regular eggs), applesauce, agave, raw sugar, baking powder, baking soda, and cocoa powder.

    Whisk in almond milk, then stir in zucchini. Add almond milk and mix, adding more if texture is too dry.

    Transfer to lined loaf pan and bake on 375 for 45 min to 1 hour.
