Couscous is a wonderful grain with lots of selenium, a mineral with many health benefits including aiding in the repair of damanged cells and decreasing inflammation. Plus it tastes great in this cold salad!

Cooked Israeli couscous
1 1/2 cup
Medium cucumbers (cut into quarters)
2 cucumber
Red onion, chopped
1/2 cup
Lemon juice
2 tablespoon
Olive oil
2 tablespoon
Garlic Powder
1/4 teaspoon
Salt
1/4 teaspoon

Cook couscous according to package instructions then run under cold water to cool, let drain.

Combine couscous, cucumbers and red onion, mix.

Mix in olive oil, lemon juice and seasonings. Gently stir to combine.
