  • Ground turkey
    1 pound
  • Red onion, diced
    1/2 cup
  • Garlic, minced
    2 clove
  • Egg
    1 egg
  • Parsley,chopped
    1/4 cup
  • Breadcrumbs (regular or GF)
    1/4 cup
  • Salt
    1 teaspoon
  • Black pepper
    1 teaspoon
  • Dried oregano
    1/2 teaspoon
  • Diced tomatoes
    1 can (28 oz)
  • Vegetable stock
    1/2 cup
  • Garlic powder
    1 teaspoon
  • Dried basil
    1 teaspoon

    In a large bowl, combine breadcrumbs with egg, salt, pepper, and oregano. Stir in the parsley, garlic cloves, and red onion, then add the turkey meat and mix to combine.

    Scoop the meat mixture into 2 tablespoon-sized portions. There should be about 16 meatballs

    In the slow cooker, combine diced tomatoes, vegetable stock, garlic powder, dried basil, and a pinch of salt and pepper.

    Add the meatballs to the slow cooker and cook on high for 4 hours. Enjoy!
