Medium eggplant
1 eggplant
Basil
1/2 teaspoon
Parsley
1/2 teaspoon
Salt
1/2 teaspoon
Pepper
1/2 teaspoon
Olive oil
4 teaspoon

Preheat oven to 450°F.

Slice eggplant into thin, circular slices. Mix spices and olive oil & coat eggplant slices with oil and spice mixture.

Arrange slices on a baking sheet. Bake 7-10 mintues or until eggplant begins to brown, flip, and bake for an additional 7-10 minutes.
