Preheat oven to 400 degrees.

In 3 shallow bowls, add almond flour to one bowl, 2 beaten eggs to another, and in the 3rd bowl, add panko breadcrumbs, Italian seasoning, grated parmesan, garlic powder, salt, and pepper.

Coat eggplant fries in the flour, shaking off the excess. Next dip the fries in the beaten egg, and finally the bread crumb mixture.

Place on a greased baking sheet and bake until browned and crispy (about 15 minutes) and serve with marinara sauce.
