Collard green leaves
2 leaves
Falafel
2 ounces
Hummus
2 tablespoons
Cucumber, thinly sliced

Carrot, thinly sliced

Trim off the stem of your collard green leaves, then microwave each one on a large plate for 30 seconds. Let cool.

Prepare your falafel according to instructions – we used an air fryer, but you can also bake them.

Place collard greens onto a plate, stacking them in different directions to make a large circle.

Spread hummus onto the middle of the greens, then stack cucumber, carrot, falafel, and sprouts.

Carefully wrap the collards, burrito style, and slice in half. Serve with favorite dipping sauce or dressing.
