Ingredients

  • White fish (cod, halibut, tilapia, mahi mahi)
    8 ounces
  • Shredded red cabbage
    2 cups
  • Lime juice
    1 lime
  • Agave or honey
    1 tablespoon
  • Mashed avocado
    1 avocado
  • Chipotle mayo
    2 teaspoons
  • OPN mango salsa
    1/2 cup
  • Olive oil
    1 teaspoon
  • Corn tortillas
    4 tortillas

    In a large bowl, add shredded cabbage, lime juice, agave and 1 teaspoon salt and ½ teaspoon pepper. Mix together and set aside to marinate.

    Pat fish dry with a paper towel, season with salt & pepper. In a large nonstick skillet over medium-high heat, add 1 teaspoon olive oil. Add fish to skillet and cook until opaque and cooked through, 3 to 5 minutes per side. Let rest 5 minutes before flaking with a fork.

    Assemble tacos – heat your tortilla, add guacamole, chipotle mayo, fish, red cabbage slaw, and mango salsa.
