Extra firm tofu
1 (14 oz) block
Olive oil
1 tablespoon
Salt
1 pinch
Pepper

Frozen stir-fry vegetables
12 ounce
Cooked brown rice
1 1/2 cup
Rice vinegar
1 tablespoon
Sesame oil
1 tablespoon
Soy sauce
2 tablespoon
Hoisin sauce
1 tablespoon
Garlic flakes
1 teaspoon
Garlic powder
1 teaspoon
Chili flakes
1/4 teaspoon
Chili garlic sauce
1 tablespoon
Coconut sugar
1 tablespoon
Maple syrup
1 tablespoon
Corn starch
1 tablespoon

Press tofu for 30 minutes. While tofu is being pressed, prepare the sauce by whisking together rice vinegar, sesame oil, soy sauce, hoisin sauce, garlic powder, chili flakes, chili garlic sauce, coconut sugar, maple syrup, vegetable broth, and corn starch. (adjust seasonings accordingly for desired heat).

When the tofu is pressed, cut it into cubes, add to mixing bowl then toss with olive oil, salt and pepper.

Preheat air-fryer to 375. Add tofu to air fryer basket and cook for 15-20 minutes, shaking basket halfway through.

As tofu is cooking, heat a large nonstick pan over medium heat. Add frozen vegetables, cover and cook until soft, mixing occasionally.

Once veggies and tofu are finished, add tofu to veggies, pour sauce over and mix to combine.

Divide into 2 servings and serve over cooked rice.
