  • Turkey breast, fully thawed
    3 pound
  • Olive oil
    3 tablespoon
  • Garlic cloves, minced (omit for Low FODMAP)
    2 clove
  • Oregano
    1 tablespoon
  • Dried thyme
    1/2 teaspoon
  • Kosher salt
    2 teaspoon
  • Black pepper
    1 teaspoon
  • Flour (regular or GF)
    3 tablespoon
  • Vegetable or chicken stock, low sodium
    1 cup

    Preheat the oven to 350º F. Grease a small roasting pan with 1 tablespoon olive oil.

    Combine 2 tablespoons olive oil, garlic cloves, oregano, thyme, salt, and pepper in a small bowl.

    Place the turkey breast on the roasting pan. Pour the olive oil mixture over the turkey and massage in with your fingers, coating fully. Loosely cover the turkey with aluminum foil and bake for 1-1.5 hours (generally 15-20 minutes per pound).

    Remove the turkey breast from the oven and brush with any pan drippings. Return to the oven for 10 to 15 minutes, until juices, run clear and a meat thermometer inserted into the thickest part reads 165º F. Remove and rest for at least 10 minutes.

    While the turkey rests, make gravy. Pour pan drippings (add 1-2 tablespoons oil or butter if needed) into a skillet and place over medium-low heat. Add flour and cook until thickened, stirring with a whisk, about 2 minutes. Add stock and cook for 3 to 5 minutes until a thick gravy forms.

    Slice turkey breast into ½” thick slices and serve topped with gravy!
