This simple yet delicious dish gives you heart-healthy fats from white fish and olive oil. Enjoy with a side of sauteed spinach or bok choy and some quinoa or grain of your choice.

Ingredients

  • Cod, Halibut, or similar white fish
    4 ounce
  • Scallions
    2
  • Parsley
    3 sprigs
  • Lemon, sliced
    1/2 lemon
  • Salt
    1 pinch
  • Pepper
    1 pinch
  • Olive oil
    1 teaspoon
Directions

    Preheat oven to 425ºF. Line a baking sheet with foil and grease with cooking spray. Arrange all of the herbs in a small “bed” on the baking sheet.

    Top with the cod, then drizzle olive oil over everything and add salt and pepper.

    Lastly, top with lemon slices. Bake in the oven for 12-15 minutes or until desired doneness.

    Serve cooked fish and roasted herbs over grain of choice!
