Cod, Halibut, or similar white fish
4 ounce
Scallions

Parsley
3 sprigs
Lemon, sliced
1/2 lemon
Salt
1 pinch
Pepper
1 pinch
Olive oil
1 teaspoon
Directions

Preheat oven to 425ºF. Line a baking sheet with foil and grease with cooking spray. Arrange all of the herbs in a small “bed” on the baking sheet.

Top with the cod, then drizzle olive oil over everything and add salt and pepper.

Lastly, top with lemon slices. Bake in the oven for 12-15 minutes or until desired doneness.

Serve cooked fish and roasted herbs over grain of choice!
