Ingredients

Long Carrots, stems attached
3 carrot
Honey (omit & swap with maple syrup for Low FODMAP)
2 teaspoons
Fresh ginger, minced
2 teaspoons
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Lemon juice
1 tablespoon
Parsley, chopped (optional)
1 tablespoon
Olive oil
2 teaspoon

Clean, dry , and peel your carrots.

Cover a baking sheet with aluminum foil and grease with cooking spray. Toss carrots with 1 teaspoon olive oil and season with salt and pepper.

Roast in a 375º oven for 20 to 25
minutes, or until browned and mostly cooked.

In a large saucepan, add honey, fresh ginger, 2 teaspoons of olive oil. Bring to a simmer and add the carrots to the pan. Swirl and stir just until the carrots are coated
nicely. Serve on a plate garnished with chopped parsley.
