4 oz chicken + 4 oz sweet potatoes + 4 oz green beans
Chicken breasts (cut into 4 pieces, 4 ounces each)
Sweet potato (cut into 1/2 inch cubes)
Garlic cloves, minced
Preheat the oven to 425ºF. Line a sheet pan with aluminum foil and set aside.
In a small bowl, combine olive oil, minced garlic, lemon juice, salt, pepper, and thyme.
Add sweet potatoes and green beans to a large bowl and toss with about ½ of the oil and garlic mixture. Place on the lined baking sheet. Place chicken in the bowl and toss with remaining dressing plus an extra pinch of salt and pepper.
Place in the center of the veggies on the baking sheet with at least 1” of space between each piece of chicken.
Bake for 30-35 minutes until chicken is cooked through (165º on a meat thermometer) and veggies are fork-tender.
