Lentils are a great source of plant based protein! If you have some sitting in the pantry, and you're not sure what to do with them, try using them in this vegetarian version of the traditional "Sloppy Joe".

Ingredients

Large carrot, shredded or diced
1 carrot
Medium yellow or white onion, diced
1 onion
Sweet peppers, chopped (~1-2 peppers)
1/2 cup
Olive oil
1 tablespoon
Dry raw lentils
1 cup
Water
1/3 cup
Canned, crushed tomatoes
1 (12-16 ounce) can
Yellow mustard
1/2 tablespoon
Worcestershire sauce
1 tablespoon
Garlic, minced
3 clove
Chili powder
1/2 tablespoon
Directions

Combine carrot, onion, and peppers in dutch oven or stock pot with the oil over medium heat.

Sautee until soft, about 3-5 minutes.

Reduce heat to low and add the remaining ingredients.

Stir gently to combine, let simmer for 30-40 minutes until lentils are soft.

Serve on toasted buns, in lettuce cups, or open faced. Top with pickles, onion, herbs, tomato, etc!
