Ingredients

  • Egg
    4 eggs
  • Egg whites
    1/2 cup
  • Frozen spinach
    8 ounces
  • Frozen pepper and onion blend
    8 ounces
  • Cheese
    4 ounces
  • Whole grain English muffin
    4 muffins
  • Turkey bacon
    4 slices
  • Salt
    1 teaspoon
  • Pepper
    1/2 teaspoon
Directions

    Preheat oven to 400 degrees and cook your turkey bacon according to instructions.

    In a large bowl, add whole eggs, egg whites, spinach, pepper and onion blend, salt & pepper.

    Spray a 9x9 baking dish with nonstick spray and add your egg mixture.

    Bake at 400 degrees for about 30 minutes or until egg is cooked through.

    Let sit to cool slightly, and using a glass or mason jar lid, cut into rounds.

    Place egg round onto your English muffin, top with cheese and turkey bacon and wrap in foil.

    Refrigerate (4-5 days) or freeze for up to 3 months. To reheat, use the oven, microwave or toaster oven.

    *Preferred method of reheating – leave them wrapped in foil and heat in oven or toaster oven on 425 for about 10 minutes. If you’re reheating from frozen, leave in the fridge overnight to defrost before reheating. *
