This Mediterranean Pasta Salad is perfect for those picky eaters. We used a chickpea pasta to pack in some extra protein, and you can swap out the feta cheese to make it completely plant based!

  • Box of pasta, cooked according to package, (we love using a bean based pasta like Banza)
    8 ounce
  • Cherry tomatoes, quartered
    1/2 cup
  • Red onion, diced
    1/4 cup
  • Cucumbers, chopped
    1/2 cup
  • Feta cheese (optional)
    2 ounce
  • Olive oil
    1 tablespoon
  • Balsamic vinegar
    1 tablespoon
  • Garlic powder
    1/2 teaspoon
  • Lemon juice
    1 1/2 tablespoon
Directions

    Mix together the pasta and diced veggies.

    In a separate bowl, stir the dressing ingredients together (olive oil, balsamic vinegar, garlic powder, lemon juice).

    Mix the dressing with the pasta and refrigerate for at least 1 hour before serving.
