This Mediterranean Pasta Salad is perfect for those picky eaters. We used a chickpea pasta to pack in some extra protein, and you can swap out the feta cheese to make it completely plant based!

Box of pasta, cooked according to package, (we love using a bean based pasta like Banza)
8 ounce
Cherry tomatoes, quartered
1/2 cup
Red onion, diced
1/4 cup
Cucumbers, chopped
1/2 cup
Feta cheese (optional)
2 ounce
Olive oil
1 tablespoon
Balsamic vinegar
1 tablespoon
Garlic powder
1/2 teaspoon
Lemon juice
1 1/2 tablespoon

Mix together the pasta and diced veggies.

In a separate bowl, stir the dressing ingredients together (olive oil, balsamic vinegar, garlic powder, lemon juice).
