  • Baby bella mushrooms, diced
    24 ounces
  • Onion, diced
    1 onion
  • Garlic, minced
    2 cloves
  • Olive oil
    2 teaspoons
  • Walnuts, chopped
    1/3 cup
  • Ground flaxseed
    1/2 cup
  • Brown rice, cooked
    1 cup
  • Soy sauce
    1 tablespoon
  • Balsamic Vinegar
    1 tablespoon
  • Honey
    1 teaspoon
  • Sirracha
    1 teaspoon
  • Hamburger bun, whole grain
    1 bun

    In a large skillet on medium-high heat, add mushrooms, onion, garlic and cook until mushrooms are cooked down and mixture is dry (about 10-12 minutes) – this is important to cook out the water so the burgers will hold.

    Stir in the balsamic vinegar, sriracha, soy sauce, salt & pepper.

    Add mushroom mixture to a food processor or blender, then add flaxseed, rice and walnuts.

    Pulse or blend until mixture just holds together – you still want some texture here. Form into 5 equal sized patties.

    Using the same skillet as the mushrooms, heat again to medium-high heat and add 1 teaspoon olive oil. Cook burgers until browned on both sides, then transfer to a baking sheet.

    Finish cooking in the oven for about 8 minutes until burgers are browned and cooked through – this will help remove any excess water as well

    Let burgers sit for 10 minutes before assembling with your favorite toppings – enjoy!
