  • Italian dressing
    2 tablespoons
  • Chicken breast
    8 ounces
  • Zucchini, diced
    6 ounces
  • Carrots, sliced
    6 ounces
  • Parmesan cheese
    2 ounces
  • Olive oil
    1 teaspoon
  • Fresh parsley, grated
    1 tablespoon
  • Salt
    1/2 teaspoon
  • Pepper
    1/4 teaspoon

    In a bowl, add chicken breast and dressing. Let sit for 30 minutes to marinate.

    Meanwhile, add carrots and zucchini to a bowl with 1 teaspoon olive oil, salt & pepper – mix together until coated.

    Lay out two 18×12-inch pieces of heavy aluminum foil on your counter and add one piece of chicken to each. Evenly divide vegetables between foil packets, placing around the chicken. Seal foil packets closed and transfer to a baking sheet.

    Preheat oven to 400 degrees F. Bake at 400 degrees F for 20-25 minutes OR until veggies are tender and chicken is cooked through (internal temp of 165 degrees F).

    Carefully open foil packets (being careful of the steam) and add 1 oz of parmesan cheese on top of your chicken.

    Leave foil packets open and return to the oven – broil for about 1-2 minutes until cheese is golden brown.

    Garnish with fresh parsley and enjoy!

    *To prepare this recipe on the grill: Heat grill to medium-high heat. Add foil packets, CLOSE LID, and grill at 400 degrees for 15-20 minutes OR until veggies are tender and chicken is cooked through (internal temp of 165 degrees F). Sprinkle each chicken breasts with mozzarella. Leave foil open and close grill lid until cheese is melted. Garnish with fresh parsley and freshy cracked salt and pepper if desired.*
