Vanilla Siggi's yogurt, 0% or 2% fat
24 ounces
Oats (raw)
1 cup
Natural peanut butter
.25 cup
Medjool dates (pitted)
5 dates
Blueberries
1 cup

Soak the dates in warm water for about 5 minutes until soft

Meanwhile, place blueberries in a small sauce pan with about 2 tablespoons of water. Let simmer, stirring occasionally, until all blueberries burst, and liquid is reduced by about half (about 5-7 minutes) and set aside to cool

Add oats, peanut butter and dates to a food processor or blender and blend until smooth and slightly sticky

Press mixture down into a 9x9 baking dish, using your hands to form the crust and top with vanilla yogurt

Top with blueberry sauce and use a knife to make your swirls

Freeze for at least 2 hours or until firm – let defrost for 10 minutes before cutting
