Rolled oats
2 cup
Almond flour
1/3 cup
Baking powder
1 teaspoon
Egg, large
1 Egg
Coconut oil, melted
1 tablespoon
Unsweetened almond milk
1 cup
Maple syrup
2 tablespoon
Peaches, diced (save some for the topping)
1 cup
Vanilla extract
1 teaspoon
Cinnamon
1 teaspoon
Salt
1/2 teaspoon
Vanilla Siggi's Greek yogurt (for topping)

Preheat oven to 350 degrees

In a large bowl, add oats, almond flour, baking powder, salt, egg, melted coconut oil, maple syrup, almond milk, cinnamon, and vanilla. Mix together until combined

Add diced peaches and fold into the batter. Don't forget to save some for the topping!

Add mixture to an 8x8 baking dish and top with sliced peaches.

Bake for 30-35 minutes or until completely cooked and toothpick comes clean

Let cool slightly and slice into 6 pieces, serve and top with about ¼ cup Siggi’s vanilla yogurt and a drizzle of maple syrup!
