  • Portobello caps
    4 cap
  • Olive oil
    4 teaspoon
  • Garlic powder
    1 1/2 teaspoon
  • Tomato or pizza sauce
    1 cup
  • Part skim mozzarella cheese, shredded
    8 ounce
  • Basil leaves (for topping, optional)
    4 tablespoon
  • Mini turkey pepperoni (for topping, optional)
    1 ounce
  • Salt
    1 pinch
  • Pepper
    1 pinch

    Preheat the oven to 450º F. Stir olive oil, garlic powder, and a pinch of salt and pepper together in a medium bowl. Toss the portobello caps to coat, then place on a lined baking sheet and bake for 8 minutes.

    Remove from the oven and allow to cool briefly. Top each portobello cap with pizza sauce and shredded cheese. Place back in the oven and switch to broil on low -- do not walk away! They will only need 2 to 5 minutes max, or until the cheese is bubbling and beginning to turn brown.

    Remove from the oven and top with basil leaves and pepperoni or protein of choice!
