Pumpkin pie spice

Sea salt

Cinnamon

Baking soda

Almond or Oat milk

Pumpkin puree
1 cup
Vanilla extract
2 teaspoon
Coconut oil, melted
2 tablespoon
Dark chocolate chips
3/4 cup
Maple syrup

Preheat oven to 375°F. Line a 12 cup muffin pan with parchment paper or liners.

In a blender or food processor, blend oats until they become a flour-like consistency.

Add other dry ingredients (pumpkin pie spice, cinnamon, salt, baking soda) and blend to combine.

In a large bowl, whisk together wet ingredients (pumpkin puree, eggs, maple syrup, coconut oil, vanilla extract, milk).

Fold dry ingredients into wet, mixing to combine, then fold in chocolate chips.
