Ingredients

  • Kale, chopped & stems removed
    12 ounces
  • Romaine or endives, chopped
    2 cups
  • Shredded carrots
    1 cup
  • Yellow bell pepper
    6 ounces
  • Cherry tomatoes
    6 ounces
  • Blueberries
    2 cups
  • Shaved parmesan cheese
    1 ounce
  • Mozzarella pearls
    1 ounce
  • Poppyseed dressing
    1/4 cup
  • Olive oil
    1 teaspoon
  • Salt
    1 teaspoon
  • Pepper
    1/2 teaspoon
  • Basil, chopped
    2 tablespoons
Directions

    In a large bowl, add your kale greens, olive oil, salt and pepper. Massage the olive oil into the kale with your hands to make sure all the kale is coated until the kale is tender and soft.

    Add romaine, peppers, carrots, blueberries, tomatoes, parmesan and poppyseed dressing. Mix until everything is coated and thoroughly combined.

    Top with a drizzle of balsamic glaze, mozzarella pearls and fresh basil.
