If you're looking for a quick meal to whip up or something to prep for lunches next week, give this delicious shrimp and veggie dish a try.
1 1/2 cup
Red bell pepper, chopped
Red onion, chopped
Garlic cloves, minced
Red pepper flakes
Transfer thawed shrimp to a bowl. Add old bay, salt, pepper, garlic powder and paprika. Toss to coat.
Heat 2 tablespoon oil in a large pan over medium heat. Add shrimp; cook, stirring frequently, until shrimp are bright pink.
In another pan, heat 1 tablespoon olive oil over medium. Add onion and garlic, sauté until fragrant. Add broccoli and bell pepper. Season with salt, pepper and red pepper flakes. Allow veggies to cook for 5-8 minutes (or more if you prefer vegetables well done). Add spinach and mix until wilted.
Cook spaghetti according to box instructions.
Combine shrimp, veggies and pasta. Serve with lemon wedge. Add salt and pepper to taste.
