Ingredients
2 servings
6" Tortilla
2 tortilla
Eggs
4 egg
Turkey or Chicken sausage, chopped
1 sausage
Fresh spinach
3 cup
Mexican shredded cheese
2 ounce
Salt
1 pinch
Pepper
1 pinch
Salsa
2 tablespoon
Directions

Coat a non-stick pan with cooking spray. Add sausage to pan and cook until golden brown.

While sausage is cooking, crack eggs into a bowl, and whisk.

Pour eggs into nonstick pan, scramble eggs with sausage.

Once almost cooked through, stir in spinach. Season with salt and pepper.

Reduce heat and continue to mix spinach in until lightly wilted.

Place egg mixture on 1 tortilla and sprinkle with the cheese, then put second tortilla on top.

Microwave quesadilla for about 1 minute.

Re-coat pan with cooking spray and transfer quesadilla back to pan on medium heat to crisp. Let sizzle for 1-2 minutes each side.

Remove from pan, cut into 6 pieces, and serve with salsa.
