Sweet potato cubes (air fried or roasted)
1/2 cup
Broccoli, steamed and chopped
4 ounce
Feta cheese
1 ounce
Eggs
2 egg
Avocado
1/4 avocado

Spray a nonstick pan and heat over medium-low heat. Add sweet potato and broccoli, cook for 1-2 minutes to heat.

Add feta cheese and mix to combine.

Crack eggs and add on top of sweet potato mixture.

Let cook until whites cook through - you may cover with a lid to trap heat and cook quicker.
