This hash is an excellent way to cook leftovers for breakfast. The sweet potatoes and broccoli can be prepared in advance. You can save a lot of time and energy by using leftovers to your advantage!

Ingredients

  • Sweet potato cubes (air fried or roasted)
    1/2 cup
  • Broccoli, steamed and chopped
    4 ounce
  • Feta cheese
    1 ounce
  • Eggs
    2 egg
  • Avocado
    1/4 avocado
Directions

    Spray a nonstick pan and heat over medium-low heat. Add sweet potato and broccoli, cook for 1-2 minutes to heat.

    Add feta cheese and mix to combine.

    Crack eggs and add on top of sweet potato mixture.

    Let cook until whites cook through - you may cover with a lid to trap heat and cook quicker.

    Transfer to plate and serve with sliced avocado.
