Ingredients

  • Extra firm tofu
    14 ounces
  • Balsamic Vinegar
    1/3 cup
  • Honey
    1 tablespoon
  • Olive oil
    2 teaspoon
  • Peach
    2 peaches
  • Cherry tomatoes
    1/2 cup
  • Fresh basil
    1 tablespoon
  • Balsamic glaze
    1 teaspoon
Directions

    Cut extra firm tofu into 1-inch cubes, slice peaches and cut cherry tomatoes in half.

    In a shallow dish, combine balsamic vinegar and honey.

    Add tofu and toss gently to coat.

    Heat a large skillet on medium-high heat and add olive oil.

    Once skillet is hot, add tofu in one single layer, season with salt and pepper and flip once browned – browning on all sides.

    Add the remaining balsamic and honey mixture and simmer until thickened and reduced.

    Remove tofu and let cool – then start assembling your skewers.

    Add a peach slice, cherry tomato, tofu, basil, and repeat. Repeat with all skewers and serve with a drizzle of balsamic glaze.
