Preheat the oven to 350° and line a standard loaf pan with baking spray and parchment.

In a small bowl, stir together the ground flax seeds and water and set aside.

In a large mixing bowl, whisk together olive oil, coconut sugar, coconut milk, apple cider vinegar, and vanilla extract. Lastly, stir in the flax seed and water mixture.

Mash the bananas in a ziploc bag and then add to the bowl and whisk in.

Add the dry ingredients: all purpose and whole wheat flour, baking powder, baking soda, salt, cinnamon, ginger, and shredded coconut. Stir together and pour into the loaf pan.

Top the batter with a sprinkle of more coconut sugar and bake for 50-55 minutes, or until a knife inserted into the center comes out clean. Cool fully before slicing.
